Recipe: Traditional frit mallorquí. Absolutely scrumptious!

The frit mallorquí  is a very popular traditional Mallorcan dish, not only with the locals but also with tourists who come to visit the island and want to tuck into the traditional regional cuisine. It can be enjoyed as a tapa/starter or as a main dish.

Although the frit mallorquí par excellance is made with lamb, a number of different variants have appeared over the years, such as the frit de matances (pork), frit de sang (blood), frit mallorquí vegà (vegan) and many more. Today, we’re going to talk about the original dish, traditionally made with lamb.

The history of this Mallorcan dish dates back to the 14th century, where it has already appeared in old recipe books, such as the Llibre de Sent Soví. Before talking about the recipe for this dish, it’s important to know that it’s even more delicious if prepared in advance, even the day before.

 

Recipe: Typical frit mallorquí

This is a very easy dish to make and it only takes 30 minutes. You’ll find the ingredients and steps listed below:

 

Ingredients (8 servings)

  • 500g potato, cubed.
  • 1 bulb of garlic, peeled and crushed
  • 1 large onion, finely chopped
  • 2 red peppers, diced
  • 3 bay leaves
  • 14 dessert spoons of olive oil
  • 50g peas
  • 200g green beans, chopped
  • 700g lamb offal, cubed
  • ½ bunch of spring onions
  • A stick of fresh fennel
  • Salt, ground pepper and paprika, to taste

 

Method:

  1. Add approximately half of the oil to a frying pan
  2. Fry the garlic and spring onions, increasing the heat slightly
  3. Add the offal (cleaned), increasing the heat to high
  4. Leave to cook for 10 minutes, stirring occasionally
  5. Remove from the heat and place into another dish
  6. In the same pan, add the rest of the oil, onion and bay leaves and cook until soft
  7. Add a pinch of salt and put aside with the offal
  8. Add all of the vegetables (beans, peas and red peppers) and fry
  9. Once they are well cooled, add the onion and lamb cooked previously
  10. Season to taste
  11. Add the potatoes and finally, the fennel
  12. Leave to cook until the potatoes are soft, stirring carefully to ensure the potatoes don’t fall apart

It should be soupy, but not oily. The best way to serve this dish is with a good glass of red wine and a slice of rustic bread. If you prefer, you can substitute lamb for beef.
